DREAM APRICOT SALAD 
2 (6 oz.) pkgs. dried apricots
1/4 c. water
1/2 c. sugar
3 (3 oz.) pkgs. lemon flavor gelatin
5 c. boiling water
1 (20 oz.) can crushed pineapple, drained
1 c. slivered almonds
Delux Dressing as follows

Combine apricots and 1/4 cup water in saucepan. Simmer until tender. Remove from heat, stir in sugar. Mash with fork until smooth. Reserve 1/2 cup for dressing. Dissolve gelatin in boiling water. Stir remaining apricots, pineapple and almonds. Pour into a 13x9x2 inch dish or pan. Chill until firm. Spread Delux Dressing over top before serving. Cut in squares. Yields about 15 servings.

DELUX DRESSING:

1 (8 oz.) pkg. cream cheese, softened
1/2 c. reserved mashed apricots
2 tbsp. lemon juice
1/4 c. powdered sugar
1/2 tsp. vanilla extract
1/2 tsp. almond extract

Combine cheese, apricots and 1/2 cup reserved from above. Beat until smooth. Add sugar and almond extract. Whip until stiff. Fold into cheese mixture. Yields 2 1/2 cups.
