PERSIMMON COOKIES 
2 c. flour
2 c. sugar
1/2 c. shortening
1 tsp. baking soda
1 egg
1 c. persimmon pulp
1/2 tsp. salt
1/2 tsp. cinnamon
1 1/2 c. pecans

Cream sugar and shortening; add pulp, egg and soda. Sift flour, salt and cinnamon. Add to mixture. Drop by teaspoons onto cookie sheet. Bake at 350 degrees for 12-13 minutes. Approximately 40 cookies.
