1 c. persimmon pulp (can use pumpkin) 1 tsp. baking soda 1 c. sugar 1/2 c. shortening 1 egg, beaten 1 tsp. cinnamon 1/2 tsp. cloves 1/2 tsp. nutmeg 1/2 tsp. salt 1 c. nuts, chopped 1 c. raisins Beat thoroughly persimmon pulp, soda, sugar and shortening. Add eggs. Beat well. Sift flour, salt and seasonings. Add dry ingredients, nuts and raisins; mix well. Drop by spoonful on greased baking sheet. Bake at 375 degrees for 12 to 15 minutes. |
