CARIBBEAN YAM BAKE | |
Low Sodium. Makes 6 servings. 3 c. cooked, mashed yams (2 lbs.) 2 eggs 1/2 c. brown sugar, packed 1/4 c. butter, melted 2 tbsp. dark rum (optional) 1/2 tsp. ground nutmeg Zest and juice from lime 2 Dole Bananas, peeled, diced In large bowl, combine mashed yams with eggs, brown sugar, butter, rum (if used), nutmeg, lime zest and juice until thoroughly mixed. Fold in diced bananas. Turn into shallow greased 5 cup baking dish. Bake in 375 degree F. oven 40 minutes. |
