OPEN - FACE CRAB SANDWICH
(MICROWAVE)
 
2/3 c. finely chopped celery
1/4 c. mayonnaise
2 tsp. lemon juice
2 (6 oz.) pkg. frozen crab meat thawed & drained
1/4 c. finely chopped onion
3 split & toasted English muffins
1 lg. tomato cut into 6 slices
1/4 c. + 2 tbsp. shredded cheddar cheese

Combine celery, mayonnaise and lemon juice and set aside.

Combine crab meat and onion in small glass bowl. cover loosely with heavy-duty plastic wrap. Microwave 1 1/2 to 2 minutes or until thoroughly heated, stirring once.

Place English muffin halves into a 12 x 8 x 2 glass baking dish. Spoon crab meat mixture onto each half.

Place tomato slices over crab meat mixture; spoon celery mixture evenly over tomato slices. Sprinkle each sandwich with pepper and top with 1 tablespoon cheese.

Microwave at HIGH for 2 to 3 minutes or until cheese begins to melt, giving dish a half turn after 1 1/2 minutes. Makes 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
