OPEN FACED TOMATO SANDWICH MELT 
1 tomato (sliced somewhat thick)
1 English muffin
basil
oregano
Parmesan cheese
1 or 2 slices of Mozzarella cheese

Cut the English Muffin in half and put the two halves on some aluminum foil. Put one slice of tomato on each half of muffin. Sprinkle with basil and oregano, followed by Parmesan cheese, then put one or two slices of mozzarella cheese on top. Put under the broiler (the toaster oven works great, too!) until the cheese is melted and bubbly.
