SPICY CARROT CAKE 
2 c. sugar
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 1/2 c. oil
3 c. grated carrots
4 eggs

Combine dry ingredients and mix well. Add eggs and oil and mix well. Now, add carrots and beat on medium speed with electric mixer about 2 minutes. Grease and flour 3 (9-inch) cake pans. Pour mix into cake pans and bake for 25 to 30 minutes.

Frosting:

1 (8 oz.) pkg. cream cheese
1 stick butter
1 c. chopped pecans (optional)
1 box powdered sugar
1 tsp. vanilla

Cream the cheese and butter until light and fluffy. Add sugar gradually. Add vanilla and pecans. Spread between layers of cake and on top. Do not ice sides of cake.
