CADILLO 
3 c. left-over meat (cut in bite size pieces) (roast, round steak, steak or hamburger meat)
1 lg. onion, chopped
4 to 6 med. potatoes (optional)
1 can tomatoes and green chilies
1 can tomatoes, chopped
1 sm. can green chilies
1 tsp. chili powder or to taste
1 tsp. cumin
1/4 tsp. garlic powder (optional)
Salt & pepper to taste

Place meat, potatoes and onion in crock pot or slow cooker; add water to cover well. Add tomatoes and green chilies, tomatoes and can of green chilies. Add seasoning to taste a little at a time unless you like it spicy. Cover and simmer on high for about 3 hours, stirring occasionally. Add 1 tablespoon cornstarch or 2 tablespoons flour mixed in small amount of water, then add to stew to thicken. May be refrigerated or frozen for use later. It will thicken on its own if not served immediately.
