COCONUT-RAISIN COOKIES 
1 c. butter
1 tsp. vanilla extract
1 1/2 c. firmly packed dark brown sugar
2 eggs, well beaten
2 1/2 c. sifted flour
1 tsp. baking soda
1/2 tsp. salt
1 c. flaked coconut
1 c. golden raisins
1 c. walnuts, chopped

Preheat oven to 375 degrees. Cream butter and extract. Add sugar, gradually, beating well after each addition. Add eggs in thirds, beating until fluffy after each addition. Sift flour, soda, and salt together; add in fourths to creamed mixture; beat until blended after each addition. Stir in coconut, raisins, and nuts. Drop by heaping teaspoonfuls onto ungreased cookie sheets. Bake for 8 minutes. Serves 5 dozen.
