WALDORF SALAD 
1 head iceberg lettuce
1 apple, cored and diced
1 1/2 tsp. lemon juice
1 1/2 c. sliced celery
12 walnut halves
1/4 c. raisins
1/4 c. seedless green grapes, halved
3 kiwi fruit, peeled and divided
1/2 c. whipping cream or low-fat yogurt
1/4 c. mayonnaise or salad dressing
Ground nutmeg

Core, rinse and drain lettuce. In a bowl toss apple with lemon juice. Stir in celery, nuts, raisins, grapes and kiwi fruit.

Dressing: If using whipping cream, whip cream to soft peaks in a chilled bowl. Fold mayonnaise into the whipped cream or dessert topping. Spread dressing over the top of the apple mixture. Sprinkle with nutmeg. Cover and chill for 2 to 24 hours.

Remove outer leaves from lettuce and line the plates.

To form cups: Lift smaller leaves from head of lettuce and place fruit mixture into leaves. Serves 4 to 6.
