BASIC BAKING MIX | |
10 1/2 c. all-purpose flour 1/4 c. + 1 tbsp. baking powder 1 tbsp. + 1 1/2 tsp. salt 2 c. shortening Mix dry ingredients well. Cut in shortening until mixture resembles fine crumbs. Cover, label and store in air tight container no longer than 3 months. Use mix for biscuits, pancakes and muffins. BASIC BAKING MIX BISCUITS: 2 1/4 c. basic baking mix 3/4 c. milk Mix baking mix with just enough milk to make the dough leave sides of bowl and rounds up into ball. Turn out on lightly floured surface. Knead lightly 10 times. Roll out 1/2" thick. Cut out biscuits. Place on ungreased cookie sheet 10 to 12 minutes. Cheese Biscuits: Mix in 1/2 cup shredded sharp cheddar. BASIC BAKING MIX MUFFINS: 2 c. basic baking mix 2/3 c. milk 1/4 c. sugar 1 egg 2 tbsp. melted butter Heat oven to 400 degrees. Line cupcake pan with muffin cups. Mix all ingredients. Beat 30 seconds. Fill cups 2/3 full. Bake 15 minutes. Ambrosia: Stir in 1 (8 1/4 oz.) can crushed pineapple, drained and 1/2 cup flaked coconut. Raisin-Nut: Stir in 1/2 cup chopped nuts and 1/2 cup raisins or dates, chopped. Cinnamon: Roll hot muffins in melted butter and then in 1/2 cup sugar and 1 teaspoon cinnamon mixture. BASIC BAKING MIX PANCAKES: 2 c. basic baking mix 1 1/2 c. milk 1 egg 1 tbsp. sugar Beat all ingredients with hand beater until smooth. Pour on hot greased griddle. Cook until golden. Turn over. Apple Pancakes: Add 1 cup applesauce and 1/4 teaspoon cinnamon. Banana Pancakes: Add 1 cup mashed bananas and 1/4 teaspoon nutmeg. Mixed Fruit: Stir in 8 3/4 ounce can drained fruit cocktail. Blueberry Pancakes: Stir in 1 cup blueberries, well drained. |
