ZUCCHINI RELISH 
10 zucchini, grated (10 c.)
4 chopped onions
2 bell peppers
2 red peppers, seeded & chopped
1/2 c. salt
2 1/2 c. cider vinegar
4 1/2 c. sugar
2 tbsp. cornstarch
1 tsp. nutmeg or curry
1 tsp. celery salt
1/2 tsp. black pepper
A little hot pepper

Put zucchini, onions and pepper through food chopper. Sprinkle salt over and let stand overnight. Drain and rinse, let set 1 hour. Add remaining ingredients, bring to boil and simmer 10 minutes, stir. Pour into hot sterilized jars and seal. Makes 6 pints.
