ZUCCHINI SQUASH RELISH 
10 c. ground zucchini (use blender, do not peel)
4 c. ground onions
5 tbsp. salt

Let above stand overnight. Drain well and rinse.

2 or 3 red chilies
1 red pepper, chopped
1 green pepper, chopped
2 tsp. celery seed
1 tbsp. cornstarch
1 tbsp. turmeric
1 tbsp. dry mustard
2 1/4 c. vinegar
4 c. sugar

Use 1/4 cup vinegar and cornstarch to make a paste. Heat sugar and vinegar slowly. When clear, add vegetables and paste; stir constantly. Boil 30 minutes then seal in jars. Makes 6 pints.

I have made this several times. I like to add more hot peppers. It's very good and worth the time spent stirring for 30 minutes. Lol...
That's the hardest part. All my friends and family love it. It goes well with hotdogs or beans.
