10 c. ground zucchini (use blender, do not peel) 4 c. ground onions 5 tbsp. salt Let above stand overnight. Drain well and rinse. 2 or 3 red chilies 1 red pepper, chopped 1 green pepper, chopped 2 tsp. celery seed 1 tbsp. cornstarch 1 tbsp. turmeric 1 tbsp. dry mustard 2 1/4 c. vinegar 4 c. sugar Use 1/4 cup vinegar and cornstarch to make a paste. Heat sugar and vinegar slowly. When clear, add vegetables and paste; stir constantly. Boil 30 minutes then seal in jars. Makes 6 pints. |
