TURKEY MEATLOAF | |
This is a great low calorie dish! 2 lb. ground turkey 1 cup finely chopped carrots 1/4 cup chopped celery 1/2 cup chopped onion 1 egg 1/2 cup bread crumbs 1/4 tsp. ground black pepper 2 tbsp. ketchup (Hunts) Preheat oven to 350°F. Place ground turkey in a large mixing bowl. Add all additional ingredients and squeeze contents of bowl through your fingers until all ingredients are evenly blended. Add more bread crumbs until mixture is not too sticky. Form into a basic meatloaf shape. Place mixture in a lightly greased bread/baking pan. Press mixture into pan so that the pan is nicely packed (no air pockets on the bottom). Press your fingers around the edges of the pan to create a 1/2-inch deep trough around the outside edge of the meatloaf. This will reduce the possibility of a messy oven. Bake in preheated 350°F oven for 1 hour. Remove from oven and glaze top with a thin layer of ketchup. Place back in oven for an additional 15 minutes. Cool for 5 minutes before slicing. Enjoy!
