THE BEST SOUL MEATLOAF YOU'VE
EVER HAD
 
1 lb. ground beef (or turkey)
1 green pepper, chopped
1 red pepper, chopped
2 carrots, chopped
1 medium or large onion, chopped
1 to 5 garlic cloves, chopped (however many you want)
1/2 cup grated Parmesan cheese
1 cup bread crumbs
1 tbsp. mustard
1 tbsp. dried or fresh basil
1 tbsp. hot sauce (to your liking)
1 egg
salt and pepper, to taste

FOR GLAZE:

1 cup ketchup (Hunts)
2 tbsp. brown sugar
1/2 tsp. apple cider vinegar

Preheat oven to 350°F.

Put thawed ground meat in a big bowl. Sauté all the veggies until soft, about 5 minutes (let cool).

Add everything else to the bowl of meat (Parmesan cheese, bread crumbs, mustard, basil, egg, hot sauce, salt and pepper, and once veggies have cooled add them).

Mix everything with hands until combined, you may need to add more breadcrumbs to make sure it holds together and doesn't crumble (don't mix it too much, just until combined, or it will get dry).

Pat the mixture into a well oiled or non-stick sprayed (Pam) 9x13-inch pan (it cooks way faster this way).

Next make the glaze (add ketchup, sugar, and vinegar into a small bowl and mix until nicely combined).

Put glaze all over the meatloaf.

Cook at 350°F for about 30 to 40 minutes (make sure the meat is completely cooked and brown, no pink spots!) (the cooking time may vary based on your oven).

Let cool, make some potato salad, slaw, slice loaf, eat, and enjoy! :)
