ZUCCHINI RELISH 
2 lg. or 8 sm. zucchini
1 sweet red pepper
10 tbsp. salt
4 tbsp. cornstarch
1 tbsp. dry mustard
1 tbsp. mustard seed
1 green pepper
2 lg. onions
4 c. sugar
3 c. vinegar
1/2 tsp. pepper
2 tbsp. turmeric

Peel and dice zucchini, peppers and onions. Add salt and cover with cold water. Soak overnight. Drain off water and add remaining ingredients; bring to a boil. Simmer 30 minutes and pack in hot jars and seal.
