CHEESE QUICHE 
1 c. grated Swiss cheese
8 inch pie shell
1 1/4 to 1 1/2 cups milk
3 eggs
Salt, pepper and nutmeg
1 to 2 tbsp. butter

Spread 3/4 of the cheese in bottom of shell. Blend milk, eggs and seasonings in a bowl to pour in bottom of shell. Sprinkle the remaining cheese and the butter on top. Bake at 375 degrees for 25 to 30 minutes until quiche has puffed and browned. May add spinach, mushrooms, onions or seafood.
