CHEESE QUICHE 
1 frozen pie crust (deep dish) or 2 regular pie crust
4 lg. eggs
2 c. half and half
1/2 tsp. salt
1/8 tsp. pepper
1/4 lb. Jarlsberg, Swiss or Monterey Jack cheese, shredded (1 c.)

About 1 1/4 hours before serving. Preheat oven to 425 degrees. In medium bowl, with wire whisk or fork, mix eggs, half and half, salt and pepper until blended. Sprinkle shredded cheese in pie crust. Pour egg mixture over cheese. Bake quiche 15 minutes; turn oven control to 325 degrees. Bake 35 minutes longer or until knife inserted in center of quiche comes out clean. Makes 6 main dish servings.
