ZUCCHINI BARS 
Here's that squash again! Seems to show up everywhere - appetizers, dinners, desserts, snacks and breads. I'm letting you in on a little secret, summer squash can be substituted in any recipe calling for zucchini.

3 c. thinly sliced unpared zucchini (about 4 sm. ones)
1 c. Bisquick baking mix
1/2 c. finely chopped onion
1/2 c. grated Parmesan cheese
2 tbsp. snipped parsley
1/2 tsp. salt (or to taste)
1/2 tsp. dried oregano or marjoram leaves
1 clove garlic, finely chopped
1/2 c. vegetable oil
4 eggs, slightly beaten
Dash pepper

Heat oven 350 degrees and grease a 13x9 inch pan. Mix all ingredients; spread in pan. Bake until golden brown, about 25 minutes. Cut into small squares or desired shapes. Makes about 4 dozen appetizers.
