MOCHA CANNOLI PIE 
2 cups (15 oz.) ricotta cheese
1/2 cup sugar
1 tbsp. instant coffee powder
1 tsp. vanilla
1 env. unflavored gelatin (Knox)
1/4 cup water
1/2 cup mini semi-sweet chocolate chips
1 cup heavy cream, whipped
1 (9-inch) prepared honey graham pie crust
additional whipped cream, for garnish (optional)

In large bowl, with mixer at medium speed, beat ricotta cheese, sugar, coffee powder and vanilla until light, about 3 minutes.

Meanwhile, in small saucepan, sprinkle gelatin over water; let stand to soften 1 minute. Cook over medium-low heat, stirring constantly, until gelatin completely dissolves. Stir gelatin mixture and chocolate chips into ricotta cheese mixture; fold in whipped cream. Pour mixture into prepared crust. Chill until set, about 3 hours.

To serve, garnish with additional whipped cream, if desired.

Makes 8 servings.
