SAFA'S CABBAGE SALAD | |
1 sm. red cabbage 1 sm. white cabbage or Lorraine cabbage or Chinese cabbage 1 (1 lb.) can of dark red beans 1 (1 lb.) can garbanzo beans 1 med. size red onion Salt & pepper to taste 2 oz. olive oil 1/3 c. vinegar 1 tbsp. dill weed, dried (optional) 6 - 8 oz. walnuts (optional) Cut cabbage transversely as to make leaves in a shredded fashion. Chop onion finely. Open and drain beans and rinse them lightly. Sprinkle salt and pepper to taste. Pour olive oil and vinegar into salad bowl and mix all ingredients very thoroughly. Marinate for at least 1/2 hour. (The more it marinates, the tastier it becomes.) While mixing and tossing salad, sprinkle dill weed into bowl with walnuts and mix again. Note: The dill weed is optional, it adds more flavor as well as the walnuts. |
