MOO GOO GAI PAN 
1 lb. chicken breasts
1 tsp. salt
1/2 tsp. pepper
2 tsp. sake
2 tsp. cornstarch
1 egg white

Mix all above ingredients together and let sit.

24 snow peas
4 tbsp. oil
12 mushroom slices
2 stalks celery, sliced
12 water chestnuts, sliced
1 clove garlic sliced
2 or 3 green onions
2 tsp. soy sauce
1/2 tsp. sugar

1. In wok put 4 tablespoons oil and heat. Add onions, celery, mushrooms. Stir-fry a couple of minutes. Add snow peas and stir-fry another minute.

2. With strainer remove vegetables from wok. In oil left, add garlic.

3. Add chicken mixture. Stir-fry until about half done. Add vegetable mixture and water chestnuts.

4. Add 2 teaspoons soy sauce and 1/2 teaspoon sugar. Cook until chicken is done.
