NO FAT HANNUKAH YAM BARS | |
1/2 c. whole wheat pastry flour 1/2 c. "old fashioned" rolled oats 1 tsp. low sodium baking powder (e.g. Fetherweight brand) 1/2 tsp. pumpkin pie spice 1 tsp. ground ginger 1 1/2 tsp. grated orange rind 1 1/2 c. boiled, mashed yams 1/3 c. dates, chopped, dusted with 1 tbsp. flour 2 egg whites, stiffly beaten Combine flour, oats, baking powder, ginger and pumpkin pie spice in a small bowl. In a large mixing bowl combine mashed yams and orange rind. Add dry ingredients and mix. Add dates and fold in egg whites. Put into a 9 x 9 inch non-stick baking pan and spread evenly. Bake at 350 degrees for 30 to 35 minutes, or until brown. Cool and cut into bars. Makes 24 bars. Each bar contains approximately 42 calories. This is anon-fat, no sugar, oil, salt and non-cholesterol treat recipe! |
