APPLE STUFFED ACORN SQUASH 
3 med. acorn squash
3 apples, peeled and chopped
2 tbsp. butter and salt
1 tbsp. lemon juice
1 tbsp. grated lemon rind
2 tbsp. butter, additional
1/2 c. honey
Ground Cinnamon

Cut squash in half lengthwise, remove seeds. Place cut side down in shallow baking dish, add 1/2 inch boiling water. Bake 375 degrees for 35 minutes. turn cut side up, brush cut surface and cavity with butter, sprinkle lightly with salt and cinnamon. Combine apples, lemon rind, 2 tablespoons butter, honey and lemon juice. Mix well. Spoon into squash. Bake uncovered at 350 degrees for 30 minutes.
