AMAZING RAISIN CAKE 
3 c. unsifted flour
2 c. sugar
1 c. Hellmann's mayonnaise
1/3 c. milk
2 eggs
2 tsp. baking soda
1 1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. salt
1/4 tsp. ground cloves
3 c. chopped peeled apples
1 c. Sun Maid seedless raisins
1/2 c. chopped walnuts

Grease and flour two 9-inch round baking pans. In large bowl with mixer at low speed, beat first 10 ingredients 2 minutes scraping bowl frequently. Or beat by hand vigorously 300 strokes; batter will be very thick. With spoon, stir in apples, raisins, and nuts. Spoon batter into pans. Bake in 350 degree oven for 45 minutes. Remove and cool.

Fill and frost with 2 cups whipped cream or dust top with powdered sugar. I've also baked this in a bundt pan. Bake for 60 minutes or cupcakes; bake only 20 to 25 minutes.
