NICK'S RICE PUDDING 
c. River rice (IGA)
2 qt. milk
1 c. sugar
2 eggs
1 tsp. cinnamon
1 tsp. vanilla

Cook on high heat until boiling begins. Turn low, cook about 30 minutes until rice is done. Stir occasionally. Beat 2 eggs; add to rice quickly and beat again. Add cinnamon and vanilla. Refrigerate until cool.
