VEGETABLE FRIED RICE 
2 c. white long grain rice
1 ear of corn
2 lg. carrots, diced
1 sm. green pepper, chopped
3 tbsp. vegetable or olive oil
1 med. onion, chopped
Salt & pepper to taste
1/2 tsp. garlic powder
1 tbsp. soy sauce

1. Cook the corn, carrots and green pepper quickly in a small amount of boiling water until tender.

2. Heat the oil in heavy skillet. Saute the chopped onion. Add the rice and saute, stirring constantly. Remove corn from cob. Add the prepared vegetables, with the corn, salt and pepper, garlic powder and soy sauce.
