1 c. salad oil
2 eggs
2 c. sugar
2 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. baking powder
3 c. chopped apples (4 or 5)
1 (6 oz.) butterscotch chips

Mix salad oil, eggs and sugar. Sift together in separate bowl, flour, baking soda, salt, cinnamon, and baking powder. Add to first mixture. Stir in apples. Mix well. Spread in a 9 x 13 inch pan. Spread butterscotch chips on top of cake. Bake 55 minutes at 350 degrees. For best results bake one day before serving. Serve topped with whipped cream.
