IRISH APPLE CAKE 
1 c. oil
2 c. sugar
2 eggs
2 tsp. salt
4 c. chopped, peeled apples
1 (12 oz.) butterscotch chips
2 1/2 c. flour
2 tsp. baking powder
1 tsp. cinnamon
1 c. nuts

Cream oil, eggs, sugar. Add dry ingredients. (Batter will be stiff.) Add apples and nuts. Top with chips. Bake 350 degrees 50 or 60 minutes. Ice cream or whip cream is a good topping.
