VERA CRUZ VEGETABLE SOUP 
1/2 cube bouillon cube
(Knorr tomato bouillon with chicken flavor)
4 c. water
1/4 tsp. salt
1 tbsp. vegetable oil
1 lg. carrot
2 med. potatoes
1 med. zucchini squash

Peel and dice carrot and potatoes, dice squash. Saute in vegetable oil. Bring water and salt to a boil, reduce heat and add vegetables; add bouillon cube and simmer until vegetables are still crisp but done.

When serving soup, serve with a slice of lemon. Squeeze lemon into soup to taste. This adds flavor and zest.
