ITALIAN MEAT LOAF | |
2 lbs. lean ground beef 2 eggs, beaten 1/2 c. milk 3/4 c. soft bread crumbs 2 tbsp. chopped parsley 1/2 tsp. oregano 1/4 tsp. salt 1/4 tsp. pepper 6 oz. shredded Mozzarella 3 slices Mozzarella cheese, cut in half Combine ground beef and next 7 ingredients. Mix well. On a sheet of waxed paper pat meat mixture out to 12x10 inch rectangle. Sprinkle top with shredded cheese. Carefully roll up meat beginning with narrow side and seal edges and ends. Put roll seam side down in large, shallow baking pan. Bake at 350 degrees for 1 1/4 hours. Arrange cheese slices over top of loaf and return to oven until the cheese melts, about 5 minutes. Serves 8. |
