MRS. L.'S ITALIAN MEATLOAF 
This recipe appeared in the local paper when we lived in Quincy, Illinois. Mrs. Lenzini is from Palmyra, MO.

1 1/2 lb. ground meat
1 egg
3/4 c. cracker crumbs
1 (16 oz.) can tomato sauce
1 tsp. salt
1 tsp. pepper
1 tsp. oregano
2 c. Mozzarella cheese, shredded
1/2 c. chopped onions
1/2 c. fresh chopped mushrooms

Combine all ingredients, only using 1/3 cup tomato sauce. Place waxed paper on cutting surface and press meat mixture into flat, oblong shape. Sprinkle cheese on top and roll into jelly roll, pressing ends together.

Place in pan and bake at 350 degrees for 1 hour. Drain off fat and pour remaining tomato sauce on top. Bake 15 minutes longer.
