ITALIAN MEAT LOAF 
3/4 to 1 lb. ground chuck
1/2 c. chopped onion
1 1/2 tsp. oregano
3/4 c. crushed cracker crumbs
2 c. shredded mozzarella cheese
1/2 to 3/4 c. chopped salad olives
2 (8 oz.) cans tomato sauce
1 egg - beaten
1/2 tsp. salt
1/2 tsp. salt

Mix together ground chuck, onion, oregano, cracker crumbs, egg, salt, pepper and 1/2 can of one of the cans of tomato sauce. Add olives and mix well.

Pat out on waxed paper to 1/2 inch thick into an oblong shape. Spread cheese over and roll up like a jelly roll. Seal edges. Place in baking dish and bake 45 minutes at 350 degrees. Take from oven and pour off grease. Pour the rest of the tomato sauce over and cook 15 more minutes.
