ITALIAN MEAT LOAF | |
2 eggs, beaten 3/4 c. soft bread crumbs 1/2 c. tomato juice 1 tbsp. parsley flakes or chopped fresh parsley 1/2 tsp. oregano 1/4 tsp. salt 1/4 tsp. pepper 1 clove garlic, minced 1 lbs. Italian sausage (bulk or with casing removed) 1 lb. ground beef 8 slices boiled ham 6 oz. shredded Mozzarella cheese, plus 3 slices Mozzarella cheese, cut in half diagonally In large bowl, combine eggs, bread crumbs, tomato juice, parsley, oregano, salt, pepper and garlic. Stir in sausage and beef, mixing well. On foil or waxed paper, pat meat mixture into 12"x10" rectangle. Arrange ham slices on top of meat, leaving 1/2" margin around edges. Sprinkle shredded cheese over ham. Starting from short end, carefully roll up meat using foil or paper to lift. Moisten seam and ends with water and press together carefully to seal, making sure that seal is secure to prevent cheese from leaking out. Place roll, seam side down, in 13"x9" pan. Bake at 350 degrees for 1 hour 15 minutes. (Center of meat will be pink because of ham.) Place cheese triangles over meat, roll and return to oven until melted slightly, about 5 minutes. Makes 6 to 8 servings. |
