HAWAIIAN CROWN CAKE | |
3 c. sifted cake flour 2 tsp. baking powder 1/2 tsp. salt 1 3/4 c. sugar 1 c. shortening, room temp. Milk 3/4 tsp. almond extract 3 eggs + 1 yolk, unbeaten With vegetable shortening, use 3/4 cup milk. With butter use 1/2 cup milk. 1. Measure flour, baking powder, salt and sugar into sifter. Stir shortening to soften. Sift in dry ingredients; add milk and extract. Beat 2 minutes at medium speed of mixer or 300 vigorous strokes by hand. 2. Add eggs and yolk. Beat 1 minute more. BAKING: Bake in greased and floured 9" tube pan in moderate oven, 375 degrees, 50 to 55 minutes. Cool in pan 15 minutes. Then loosen and turn right side up on rack to cool. SERVE: Cake is delicious served plain without any topping. Or it may be crowned with a whipped cream topping or an orange flavored glaze. Also ice cream balls may be piled in center for a novel serving idea. |
