SWEET POTATO PIE 
2 c. mashed cooked sweet potatoes
2/3 c. firmly packed light brown sugar
1 c. heavy cream
2 lg. eggs
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/2 tsp. ground nutmeg
1/4 tsp. ground allspice
1 unbaked 9" pie shell

Heat oven to 450 degrees. Combine sweet potatoes, sugar, cream, eggs and spices. Pour mixture into pie shell. Bake pie 10 minutes. Reduce oven temperature to 325 degrees and bake pie 40 minutes longer or until center is set. Cool completely. Serve with whipped cream if desired.
