MEAT LOAF 
1 1/2 - 2 lbs. lean ground beef
2 eggs
1 potato, grated
1 carrot, grated
1 sm. onion, diced
Salt & pepper to taste
2 tbsp. picante sauce
1 tsp. chili powder

Add seasonings to beaten eggs; mix well. Make into ball and flour on all sides. Brown in Dutch oven. Cook on low for about 1 hour. After 30 minutes, pour 2 small cans of tomato soup over top of meat loaf, continue cooking for about 30 minutes.
