MANICOTTI 
1/4 c. Parmesan cheese
1 lb. ricotta cheese
8 oz. shredded Mozzarella
Salt and pepper
2 tsp. parsley
1 lb. ground beef
2 c. spaghetti sauce

Mix first 6 ingredients. Brown ground beef. Prepare spaghetti sauce. Combine ground beef and spaghetti sauce. Stuff cooked manicotti shells with cheese mixture. Arrange shells in large pan. Pour sauce over shells. Pour 1 cup water over all. Cover and bake at 350 degrees for 45 minutes. Sprinkle with 6 oz. shredded Mozzarella. Bake uncovered another 15 minutes.
