QUICK CHEESE BREAD | |
1 c. milk 2 1/3 c. sifted flour 3/4 c. sugar 4 tsp. baking powder 1/4 tsp. baking soda 1 tsp. salt 1 c. coarsely shredded cheddar cheese 1 egg, slightly beaten 1 tbsp. melted butter Sift together flour, sugar, baking powder, baking soda and salt. Mix in cheese. Make a well in the center of these dry ingredients. Beat egg with melted butter and then combine with milk. Pour egg mixture into well, and stir in dry ingredients until all are moistened. Pour into a greased 8 1/2" x 4 1/2" x 2 1/2" loaf pan. Bake at 325 degrees for 55 to 60 minutes, or until bread tests done with a cake tester inserted in center. Remove loaf from oven and cool in the pan on a wire rack for 10 minutes. Then remove loaf from pan and complete cooling. When loaf is cool, wrap tightly and store overnight before slicing. This bread is also good toasted. Makes 1 loaf. VARIATION: Scald milk. Pour over 1 cup chopped, pitted dates, or 1 cup dried currants and let stand 5 minutes before mixing with egg and melted butter. Makes 1 loaf. Excellent. |
