PEAR CRUMB PIE | |
1 (No. 2 1/2) can Bartlett pears 1 (9 inch) unbaked pastry shell 3/4 c. sugar 1 tbsp. cornstarch 1 tsp. grated lemon rind 1 tbsp. lemon juice 1/4 c. butter 1/2 c. flour 1/2 tsp. cinnamon 1/2 tsp. ginger 1/4 tsp. mace Drain pears, cut in quarters, arrange in pastry shell. Mix together 1/4 cup sugar, cornstarch, lemon rind and juice, spread over pears. Mix remaining 1/4 cup sugar, flour and spices; add to softened butter stirring lightly with fork until of crumb consistency. Sprinkle over pears. Bake in hot oven 475 degrees, for 15 minutes; reduce to 375 degrees and continue baking 20 minutes longer. |
