POPPY SEED ZUCCHINI SALAD 
2 1/2 tbsp. red wine vinegar
2 tbsp. orange juice
1 tbsp. poppy seeds
1 tsp. sugar
1/2 tsp. dry mustard
1/4 tsp. salt
1/2 c. vegetable oil
1 onion
8 lg. zucchini, cut in half lengthwise & shred thinly

Whisk first 6 ingredients in bowl. Gradually whisk in oil. Mix in onion. Cover and refrigerate. Can be done 1 day ahead. Place zucchini in large bowl and add dressing and toss.
