ZUCCHINI MUSHROOM SALAD 
2 med. zucchini
1/2 lb. mushrooms
1/4 c. white wine vinegar
1/2 c. olive oil
1/2 tsp. oregano
1 tsp. tarragon
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. sugar
1 sm. clove garlic, crushed
10 cherry tomatoes, halved
Romaine

Slice zucchini in thin crosswise slices. Slice mushrooms thinly through cap and stem. Combine vinegar, oil, and seasonings and blend well. Place zucchini and mushrooms in bowl and stir in oil and vinegar mixture. Marinate at least 1 hour, stirring occasionally. Drain marinade and reserve for future use. Toss zucchini and mushrooms with cherry tomatoes and serve on Romaine leaves.
