BOLOGNESE STUFFED MUSHROOMS | |
1 lb beef mince 4/6 large flat open cup mushrooms jar of bolognese sauce onions aubergine (eggplant) potatoes courgette (zucchini) carrot (any other suitable vegetables) whole garlic cloves mozzarella cheese cheddar cheese half pint chicken stock half pint white wine Cut vegetables to a uniform size approx 1" cubes. Put in oiled baking tray, add char grill flavour spice & bake in a hot oven for 30 mins. Meanwhile, finely chop the onions, fry and caramelise, add mince, and brown. Stir in bologneses sauce, gently simmer for a few minutes. Place mushrooms into the oven dish with the vegetables. Add bolognese sauce to mushrooms. Sprinkle mixed grated cheese on top of mushrooms; pour stock and wine into dish. Return to oven 15-20 mins or until cheese is melted and browning. Serve with crusty bread for juices.
