TURKEY - ZUCCHINI SALAD 
1/4 c. lemon juice
3 tbsp. vegetable oil
2 tbsp. chopped fresh parsley
1 1/4 tsp. sugar
1 clove garlic, crushed
3 c. chopped turkey
11 oz. can mandarin oranges, drained
1 med. unpeeled apple, cut into wedges
1 med. zucchini, sliced
Red leaf lettuce
2 tbsp. sliced almonds, toasted

Combine first 5 ingredients in jar; cover tightly, shake well and set aside. Combine turkey, orange, apple and zucchini in shallow container. Pour half of dressing over mixture, toss to coat. Cover and marinate in refrigerator for one hour. Place lettuce on platter. Arrange turkey mixture on lettuce. Sprinkle with toasted almonds. Drizzle with remaining dressing. Yields 4 to 6.
