BEEF JERKY 
3 lbs. lean beef, cut in strips, 1/4" x 1/2" at least 6" long

Marinate in: 1 c. soy sauce 2 tsp. onion powder 1/4 tsp. ground red pepper 1 tsp. ground black pepper 1 tsp. garlic powder 1/2 tsp. sugar 3 tsp. seasoned salt

Mix all ingredients together, then pour over beef strips. Marinate 18 to 24 hours. Drain. Then hang beef strips from bars on oven rack. Heat 175 degrees or warm with door ajar for 6 hours. Place aluminum foil on bottom of oven to catch juices. Turn off oven temperature and let hang in oven 6 more hours with door ajar. Leave the oven door ajar to allow moisture to escape and to ensure the best drying process. The jerky should be slightly flexible, bending before it breaks. Place in a lidded dry container and store in a cool area.
