BEEF WITH BROCCOLI 
2 to 3 lbs. tender beef
1/2 lb. broccoli tops
1 tsp. cornstarch
1/3 c. water
7 tbsp. vegetable oil
1 garlic clove, crushed
1 tsp. salt
1/2 tsp. soy sauce
3 tbsp. chicken broth
1/4 tsp. pepper

MARINADE:

1 tsp. dry sherry
1/2 tsp. baking soda
1 tbsp. soy sauce
1 tsp. cornstarch
1 tbsp. sesame oil
1/4 tsp. sugar

Cut beef in thin strips. Mix marinade ingredients in a bowl with the beef, and marinate 1 hour. Cut broccoli tops lengthwise into 2 or 3 pieces. Dissolve cornstarch in water to make paste, and set aside.

Heat 6 tablespoons oil in wok over high heat for 1 minute. Stir-fry marinated beef until lightly browned. Remove beef and drain well over wok. Set aside.

Add 1 tablespoon oil to oil left in wok. Heat 30 seconds. Stir-fry garlic. Add broccoli tops and stir-fry. Add cornstarch paste, salt, soy sauce, chicken broth and pepper.

Stir-fry until sauce thickens slightly. Add cooked beef and mix well. Remove from wok and serve. Serves 6.
