BEEF AND VEGETABLES | |
1 lb. ground beef 1 lg. onion, sliced 1 (10 oz.) pkg. frozen broccoli or fresh broccoli 2 med. carrots, cut diagonally into 1/4 inch slices 1 (4 oz.) can mushrooms stems and pieces, undrained 1 can condensed beef broth 1/4 tsp. ground ginger (optional) 1/4 tsp. ground mace (optional) 1/4 c. soy sauce 1 tbsp. + 1 1/2 tsp. cornstarch Cook and stir ground beef and onion until light brown - drain. Rinse frozen or fresh broccoli under running cold water to separate; drain. Stir broccoli, carrots, mushrooms, broth, ginger and mace into beef mixture. Heat to boiling; reduce heat. Cover and simmer until vegetables are crisp tender, 5-7 minutes. Mix soy sauce and cornstarch; stir into beef mixture. Heat to boiling; reduce heat. Simmer uncovered 1 minute. Serve with hot cooked rice or noodles. 6 servings. |
