SWEET POTATO SOUFFLE 
3 c. cooked (or canned) yams
1 c. sugar
2 eggs
1/2 stick butter
1 tsp. vanilla

Combine ingredients (mixing well) with electric mixer. Pour into greased oblong casserole dish.

TOPPING:

1 c. light brown sugar
1/2 c. self-rising flour
1/2 stick butter
1 c. chopped pecans

Mix topping ingredients by hand until well mixed. Sprinkle evenly over top of yam mixture. Bake at 350 degrees until topping is lightly browned.
