QUICK AND EASY ENCHILADA 
1 pkg. tortillas
1 pt. cottage cheese
1 lg. can chili with or without beans
1 can enchilada sauce
Several slices Monterey Jack cheese

If using an oblong pan cut tortillas to fit. Starting with a tortilla, or as many as it takes to cover bottom of pan, build layers with cottage cheese, tortilla, chili, tortilla, etc. until pan is almost full. End with a tortilla layer and cover with cheese that has been cut into sticks. Finish with enchilada sauce and place in an oven at 350 degrees for about 1/2 to 3/4 hour or until warmed through and cheese is melted.
