MOM'S EASY MEXICAN DORITO
CASSEROLE
 
1 1/2 lb. lean ground beef
1 large onion, finely chopped
1 (28 oz.) can enchilada sauce (I use Old El Paso)
1 bag Dorito Nacho cheese chips
1 bag shredded cheddar cheese

Brown meat and chopped onion. Drain. Mix with enchilada sauce.

In a casserole dish, layer Doritos, cheese and meat/sauce mixture ending with a layer of cheese on top.

Bake at 350°F until cheese melts.

This recipe is definitely for the lazy cooks out there! It's so easy and quick to make, but you can also use it as a base for more complicated meals. I had to serve it up with some fresh guacamole and sour cream, but it was still pretty good. I would recommend trying different types of Doritos in the future, because the Nacho chips are not my favorite type.
